  1. Prepare 1 as listed in recipe 2 servings of fried rice
  2. Make ready Thin omelette
  3. Make ready 2 ◎Eggs
  4. Take 1 dash ◎Salt
  5. Get 1 Vegetable oil
  6. Take Ankake soup
  7. Get 200 ml ○Water
  8. Prepare 1/2 tsp ○Chicken stock granules
  9. Prepare 1 dash each ○Salt and pepper
  10. Take 1 few drops ○Sesame oil
  11. Prepare 1 tsp Homemade char siu sauce
  12. Get 1 tsp Homemade lard
  13. Take 1 dash ○ Umami seasoning
  14. Take 1 Katakuriko slurry
  15. Prepare 1 Finely sliced green onions
  16. Make ready 8 Parboiled whiteleg shrimp

Instructions to make Special Fried Rice with Ankake Soup:
  1. Prepare the soup: put the ingredients marked ○ in a pot and heat. Taste, and season with salt if necessary.
  2. Once it starts to simmer, add the katakuriko slurry to thicken it.
  3. Mix with a rubber spatula, and once thickened, turn off the heat.

  5. Beat together the ◎ marked ingredients. Heat a frying pan and grease with vegetable oil. Pour in the beaten egg mixture to coat the entire pan.
  6. Once set, slide a chopstick underneath and carefully flip it over.
  7. This side only needs to be fried for a few seconds!
  8. Quickly place on top of the fried rice. Make one more omelette for the other portion of fried rice.
  9. Using chopsticks etc., arrange the omelette so that it completely covers the rice.
  10. Peel and remove the vein from each shrimp, then soak in sake and katakuriko (not listed) to remove the odour, and parboil. I recommend using whiteleg shrimp.
  11. Slice the parboiled whiteleg shrimp in 2, diagonally ※Slicing them makes it easier to arrange them on top of the omelette.
  12. Heat the Step 3 pot again, and add the Step 11 shrimps.
  13. Bring to a boil, add the thinly sliced green onion, continue to heat for a few more seconds and then turn off the heat quickly ※Be sure not to heat for too long after adding the green onions.
  14. Add the Step 13 ankake soup to Step 9.
  15. Flip any backwards shrimp over, so that the non-cut sides are facing upwards.
  16. Finally, pile some of the green onions in the center, and it's done!
  17. Adding soup and omelette to fried rice makes it extra luxurious. Enjoy while it's still hot.
