  1. Prepare 2-3 bunches mizuna (potherb mustard)(wash and cut into 3 cm length, pat dry with paper towels)
  2. Prepare tofu dressing:
  3. Prepare *350~400 g tofu (drain to remove excess water)
  4. Get *3-4 Tbsp dashi (or Japanese style soup stock like Mentsuyu)
  5. Make ready *1-2 Tbsp sugar
  6. Take *1 Tbsp soy sauce (if you use Mentsuyu, no need to put in)
  7. Prepare *1 pinch salt
  8. Make ready *1~2 tsp grated ginger
  9. Get *1 Tbsp sesame oil
  10. Make ready *3 Tbsp ground sesame seeds
  11. Take to taste toasted white sesame seeds for topping

Instructions to make Mizuna with Sweet Tofu Sauce:
  1. Beat tofu until smooth and creamy in a bowl. Mix all tofu dressing ingredients (*) well. Adjust the saltiness and sweetness to suit your taste.
  2. Just before eating, add mizuna to the bowl, combine with the tofu dressing.
  3. Sprinkle with the toasted white sesame seeds.
