The ingredients needed to make Herbed Chicken and Mushrooms:
  1. Make ready 5 cup sliced assorted fresh mushrooms (such as shiitake, button, cremini, and oyster)
  2. Take 1 medium onion, chopped
  3. Make ready 1 medium carrot, chopped
  4. Prepare 1/4 cup dried tomatoe pieces (not oil-packed)
  5. Get 3/4 cup reduced-sodium chicken broth
  6. Prepare 1/4 cup dry white wine or reduced-sodium chicken broth
  7. Make ready 3 tbsp quick-cooking tapioca
  8. Prepare 1 tsp dried thyme, crushed
  9. Take 1/2 tsp dried basil, crushed
  10. Make ready 1/2 tsp salt
  11. Prepare 1/4 to 1/2 teaspoon black pepper
  12. Prepare 12 small chicken thighs and/or drumsticks (about 3 pounds total), skinned
