The ingredients needed to make Crispy Pata:
  1. Prepare 2 liter cooking oil
  2. Make ready 2 medium pork thigh or pata
  3. Make ready 1 head garlic crushed
  4. Take 3 tbsp salt
  5. Get 1 tsp ground whole black pepper
  6. Make ready 2 bay leaf
  7. Prepare 2 onions sliced
  8. Get 4 liter water for boiling

This is crispier than the regular and I also included the steps on how to make a yummy dipping sauce. Crispy Pata dish is deep fried pork legs, Pata means Pork Feet in Spanish. This is a very delicious meal and although it is very high in cholesterol, but with the crispy skin and soft meat plus the dipping. Crispy pata is boiled pork (hock with the knuckle) and deep fried until the rind is puffed and crisp while the meat stays soft and moist.

Steps to make Crispy Pata:
  1. In a large pot, put all ingredients except cooking oil and boil until pork is fork tender that is at least 45 mins, adding water if needed.
  2. Drain the pork and let cool. Put in the fridge if possible.
  3. In a deep fryer, heat the cooking oil until very hot.
  4. Deep fry the pork thigh one at a time until it turns beautifully brown and blisters have appeared on the pork skin.
  5. Drain on paper towels and serve with steamed rice and your favourite sauce.
