The ingredients needed to make Pinakbet:
  1. Get 1/4 lb pork (thinly sliced)
  2. Prepare 2 piece tomatoes (large)
  3. Prepare 1 tbsp ginger (minced)
  4. Prepare 1 medium onion, chopped
  5. Get 3 clove garlic, crushed or chopped
  6. Prepare 4 tbsp shrimp paste
  7. Take 1 cup shrimps
  8. Get 1/4 medium squash / pumpkin (cubed)
  9. Take 1 bunch string beans (cut into 3 inch pieces)
  10. Get 1 medium eggplant, sliced
  11. Get 6 piece okra
  12. Prepare 3 tbsp cooking oil
  13. Take 1 cup water
  14. Make ready tsp salt
  15. Take pinch pepper

Pinakbet or Pakbet is a Filipino vegetable dish that is flavorful as it is colorful. A medley of local Pork, shrimp paste, and tomatoes are used to give it its distinctive taste. Pinakbet Tagalog is nutritious as it is delicious! One of my fondest memories growing up were the weekends my brothers and I sat down to a lunch of our mother's pinakbet.

Steps to make Pinakbet:
  1. Heat oil in a big pan
  2. Sauté garlic, onion, ginger, and tomatoes.
  3. Add pork and cook until brownish
  4. Put in shrimp paste and the shrimp. Cook for 2 minutes
  5. Add water and simmer for 10-15 minutes or until pork is tender. Add a dash of salt and pepper.
  6. Add the squash. After 5-7 minutes, add the eggplant.
  7. Add the remaining vegetables. Season with a bit of salt. Do not overcook.
  8. Serve with steamed rice. Enjoy! :)
