The ingredients needed to make Mexican Meatloaf:
  1. Prepare 1 lb lean ground beef
  2. Get 1 cup plain bread crumbs
  3. Take 1 egg beaten
  4. Prepare 1 tbsp taco seasoning mix
  5. Make ready 3 tbsp ketchup
  6. Take 1 can 8-ounce tomato sauce
  7. Take 1 can 14.5 ounce Ro-Tel tomatoes or diced tomatoes with jalapeños or Mexican style diced tomatoes
  8. Prepare 1 salt and pepper to taste
  9. Take 1 Mexican blend cheese
  10. Prepare 1/2 onion diced

Steps to make Mexican Meatloaf:
  1. Heat oven to 350
  2. Mix hamburger, onion, bread crumbs, egg, and taco seasoning. Mix well with your hands.
  3. Add ketchup, half the tomatoes and half the tomato sauce. Mix well.
  4. Put half the mixture into a loaf pan. Cover with cheese not coming quite to the edge.
  5. Top the cheese with the rest of the meat mixture. Pat down to make a loaf. Press the sides together so the cheese won't drip out when cooking.
  6. Mix the remaining tomato sauce and tomatoes and spread on top of the loaf.
  7. Bake for 30 mins. Remove from oven and drain off any juices in the pan. I use a double layer meatloaf pan that allows the juices to collect in the lower pan.
  8. After draining juices put back into the oven for another 30 mins. Top the loaf with cheese and return to the oven until the cheese melts.
  9. Continue checking internal temperature until it is 160°F. I had to cook about another 10 mins but your oven may vary. Remove from oven. Let cool and firm about 10-15 mins before cutting and serving.
