The ingredients needed to make Chicken laksa:
  1. Prepare Laksa Curry Soup:
  2. Take 1 tsp oil
  3. Get 2 tbsp Laksa curry paste from below
  4. Get 1 pack chicken thighs or breast
  5. Make ready 1 cup sliced carrots
  6. Prepare 1/2-1 cup other veggies of choice sliced or chopped small, such as bell peppers, zucchini, broccoli, beansprouts etc
  7. Make ready 1 l/2 pack rice noodles uncooked
  8. Make ready Coriander and red chilli for garnish
  9. Get Laksa Paste
  10. Take 2 tsp coriander seeds
  11. Prepare 1/2 tsp cumin seeds
  12. Get 1 inch fresh turmeric root peeled and chopped or you can use 1 tbsp turmeric powder
  13. Make ready 1 inch fresh ginger root - peeled and chopped
  14. Get 4-6 red bird eye chillis
  15. Take 1 stalk lemongrass - finely sliced
  16. Make ready 3 cloves garlic
  17. Make ready 2 tbsp cashews
  18. Make ready 1 tsp lime juice
  19. Get 1 tbsp shrimp paste
  20. Prepare 3 cups veggie broth or water
  21. Prepare 1 can coconut milk about 1.5 cups and can add some more water if needed
  22. Prepare 1 lime - cut in wedges

Put the chicken in a large saucepan with the coriander seeds, ginger, lemongrass, lime zest and a little salt. This milky chicken and noodle laksa is full of Malaysian flavour! Steps to make Chicken laksa:
  1. Pound every ingredients on paste base together
  2. So once you make the paste, turn on a medium side saucepan on medium heat and add paste and cooking oil, stir well until the paste started to release the oil then add chicken, coconut milk, vegetable stock or water. Seasoning it with fish sauce, soysauce and leave it to cook for about 30-45 min
  3. Take chicken out and use 2 forks shredded the chicken and leave it in a bowl
  4. On the other sauce boil some water and cook your rice noodles. Drain water out
  5. To serve, in a bowl place a handful of bean sprouts at the bottom, add noodles, carrot and your prefer vegetables and pour some sauce in. Garnish with coriander, lime and red chilli
