  1. Get 1 cup Arhar dal
  2. Take 2 cups chopped veggies like( brinjal, taro root, sakarkand, potato, raw banana)
  3. Prepare 1 tomato chopped
  4. Get 1 medium onion chopped
  5. Get 3 green chilli chopped
  6. Take 1 tsp ginger grated
  7. Get 2 tbsp grated coconut
  8. Get 1/2 tsp turmeric powder
  9. Take 1/2 tsp panch phutan
  10. Make ready 1 tbsp roasted cumin powder
  11. Prepare 1 tej patta(bay leaf)
  12. Take 2 tbsp desi ghee
  13. Take to taste Salt

Instructions to make Dalma from Odisha:
  1. Clean, wash and soak the dal in warm water. Cut the veggies earlier and keep in water to prevent brinjal and raw banana turn black.
  2. In a pressure cooker take 3 cups of water. Add the turmeric powder and washed Arhar dal. Boil for 3 minutes without covering.
  3. Now mix the chopped veggies, grated coconut and pressure cook for 1 whistle. Let the cooker cool.
  4. In a wok heat ghee. Allow the panch phutan to splutter. Add tej patta, chopped onion and green chili. Fry till the onion translucent.
  5. Now and chopped tomatoes, grated ginger and salt as per required. Cook in medium heat till chopped tomatoes are soft and mushy.
  6. Add half a cup of water, mix well, bring to boil and transfer to cooker containing boiled dal, grated coconut and veggies.
  7. Mix well. Cook and bring to boil without covering. Switch off the flame and add the fried Cumin powder to give a beautiful aroma and taste to the prepared Dalma. Now the Dalma is ready to serve. - Thanks
