  5. Prepare 1 tomato
  6. Take 1 red onion

Instructions to make 'Mayai Mwitu' Deviled Eggs With Uber-Kenyan Kachumbari, Matoke:
  1. Boil the eggs and matoke together. Make sure you wash the eggs first.
  2. Heat the oil and cook the Simba Mbili in it for a few seconds.
  3. Cut the eggs into neat halves and remove the yolks carefully.
  4. Mash one matoke together with the egg yolks and the other one separately.
  5. Chop the vegetables into small pieces and mix together to make kachumbari.
  6. Take a little of the kachumbari and mix into the matoke-egg yolk mixture. Then add to the mixture half the Simba Mbili-flavoured oil and a little lemon juice. Season the mash and put small balls into the egg whites and shape well.
  7. The rest of the kachumbari mix with Simba Mbili-flavoured oil and a little lemon juice. Season with salt.
  8. The other mashed matoke shape into a ball.
  9. Serve.
