The ingredients needed to make Vegetarian Laksa:
  1. Get For the curry paste
  2. Make ready 1cup Red chillies soaked in warm water for an hour
  3. Get 1/4 cup peeled shallots
  4. Make ready 1 inch ginger, deskinned and chopped
  5. Take 5 Garlic Pods
  6. Get 1 bunch Coriander Stalks, cleaned
  7. Make ready 1 stalk lemongrass, cleaned and chopped
  8. Take 3-4 kafir lime leaves
  9. Prepare 1 tbsp coriander seeds
  10. Make ready 1 tbsp cumin seeds
  11. Take 1 inch piece of fresh turmeric (Use 1 tsp turmeric powder instead)
  12. Take 1 pkt coconut milk
  13. Make ready 1/2 cup Vegetable stock (To adjust consistency)
  14. Prepare 1 tbsp sugar
  15. Get 1 pkt Rice Noodles cooked as per instructions
  16. Take 1 bowl Julienned Veggies like carrots, beans, Zucchini,Baby Corn
  17. Prepare to Taste Salt
  18. Take 2 tbsp oil
  19. Get For Garnishing
  20. Prepare As required Chopped Spring Onions
  21. Get As required Toasted Peanuts
  22. Make ready As required Lemon Wedge

Instructions to make Vegetarian Laksa:
  1. Boil Noodles as per package instructions and drain water. Set aside.
  2. Add the ingredients of the curry paste into the blender and grind to a smooth paste.
  3. Steam the Julienned Vegetables until Al Dente and Drain the water.
  4. Heat oil in a pan. Add the curry paste and cook till it releases oil. Now slowly add the coconut milk stirring continously. Add vegetable stock to adjust the consistency. Now add the salt, sugar, kafir lime leaves and bring it to a simmer on low flame.
  5. Take a bowl. Plate a layer of the Noodles, the steamed veggies, and pour the curry over the noodles to the brim. Top with spring onions and peanuts and serve warm with a lemon wedge.
