  1. Prepare Spice paste
  2. Get 160 grams Shallots
  3. Get 10 grams Garlic
  4. Take 10 grams Ginger
  5. Take 5 Birds Eye Chillies
  6. Make ready 100 ml chilli paste
  7. Take 4 Candle Nuts or 6 macadamia nuts
  8. Take 25 grams Lemon Grass
  9. Take 15 grams Galangal
  10. Prepare 250 ml Water
  11. Make ready Blend above into a smooth paste
  12. Make ready Laksa Gravy
  13. Take 3 tablespoon Ground Coriander
  14. Get 1-2 tablespoon Chilli Powder
  15. Prepare 1 teaspoon Turmeric
  16. Take 15 pcs dried tofu balls
  17. Take Salt and sugar
  18. Get 1/3 cup Vegetable Oil
  19. Take 200 grams Prawns
  20. Get 300 grams Chicken breast
  21. Get 1 litre coconut milk
  22. Get 750 ml boiling water
  23. Take 1 Chicken Stock Cube
  24. Get Condiments and garnish
  25. Make ready Bean Sprouts, Tailed and Cleaned
  26. Get 2 stalk Spring Onions, Chopped
  27. Prepare 5-6 Bird Eye Chillies, Thinly Sliced, optional
  28. Get Crispy shallots
  29. Prepare leaves Mint
  30. Make ready Lime Wedges
  31. Prepare Shredded Chicken from above
  32. Take Prawns from above
  33. Get 250 grams Rice Noodles Blanched according to packaging
  34. Get Chilli Oil or sambal oelek for extra spice (optional)

Steps to make Curry Laksa:
  1. Place the chicken breast in medium pot with 2 cloves of garlic, 1 small sliced onion and 250ml water. Bring to boil then simmer for 20 minutes. Strain the stock and keep for the curry. Once cooled, shred the chicken. Cover and set aside. In another pot, place prawns with 100ml of water. Once boiled, simmer for 4 minutes or till prawns are cooked through. Strain the stock for the curry. Cover prawns and set aside.
  2. Heat a large non-stick sauce pan with 1/3 cup vegetable oil. Once hot, add blended spices. Keep on medium to low heat. Let the spice cook, stirring occasionally for 10 to 15 minutes. Add stock cube, coriander turmeric and chilli powder and both the stock liquid.
  3. Add coconut milk and tofu balls, stir to mix. Let simmer for another 20 mins. Prepare ingredients for the condiments and place in individual bowls. Blanch the noodles and transfer them into another covered bowl.
  4. Add salt and sugar for seasoning. If you prefer less thick laksa broth, add the boiling water. Stir and keep warm.. - To assemble, place noodles in individual bowl. Pick and mix your favourite condiments, pour laksa gravy and enjoy
