  4. Get 1/2 cup shredded Parmesan cheese
  5. Get 29 ounces San Marzano tomatoes certified
  6. Get 1/2 teaspoon granulated garlic powder
  7. Prepare 2/3 teaspoon kosher salt
  8. Prepare To taste ground black pepper
  9. Take 2 tablespoons peanut oil

Instructions to make Chicken Simmered in Tomatoes and Leeks:
  1. Slice the cup of olives. Slice the leek in half. Wash the leeks especially inbetween the layers. And slice thinly. Slice the partially frozen chicken very thinly.
  2. Heat the oil anx add the sliced chicken. Add the olives and leeks and simmer 15 minutes. Then add the tomatoes including all the juices.
  3. Simmer covered for 40 minutes and allow the juices to reduce. Add Parmesan cheese and cover. Let rest 12 minutes. Serve I hope you enjoy!!!
