The ingredients needed to make Shio Koji Lemon Hot Pot:
  1. Get 3 tbsp Shio-koji
  2. Take 2 tbsp Sake
  3. Get 3 tbsp Usukuchi soy sauce
  4. Get 1400 ml Kombu based dashi stock (I used a ready-made scallop stock)
  5. Get 1 half a head Napa cabbage
  6. Get 1 Leafy greens such as mizuna, chrysanthemum greens, etc.
  7. Prepare 1 Various mushrooms - shiitake, enoki, eringi, shimeji, etc.
  8. Get 1 Green onion
  9. Prepare 1 Cod, shrimp, and other seafood that you like
  10. Take 1/2 Lemon
  11. Take 3 tbsp Lemon juice

Steps to make Shio Koji Lemon Hot Pot:
  1. Put the kombu dashi into an earthenware pot. Add the shio-koji, sake, and light soy sauce, and bring to a boil.
  2. Starting with the vegetables that take longest to cook (the stems of the napa cabbage, etc.), put the hot pot items into the pot. Once you've added everything else in, lay the lemon slices on top, and let it simmer gently.
  3. Once the fish and vegetables have cooked through, add the lemon juice, quickly simmer just a little more, and it's done.
  4. The broth is already a little salty, so you can eat this just as it is. Or, if you prefer, enjoy it seasoned with a little extra lemon and soy sauce.
  5. It's convenient to have bottled organic lemon juice stored in your fridge.

Grains can be great for fighting a terrible mood. Quinoa, millet, teff and barley are all really excellent for helping boost your happiness levels. These foods fill you up better and that can help you with your moods also. Feeling hungry can actually bring you down! The reason these grains are so good for your mood is that they are not difficult for your body to digest and process. You digest these grains faster than other things which can help boost your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.

Your mood could really be helped by green tea. You just knew green tea had to be mentioned, right? Green tea is loaded with an amino acid known as L-theanine. Studies prove that this particular amino acid can essentially stimulate brain waves. This helps improve your mental energy while simultaneously making the rest of your body more relaxed.
