The ingredients needed to make White Bean Turkey Chili:
  1. Make ready 1/4 cup olive oil, divided
  2. Make ready 1 green bell pepper, roughly chopped
  3. Prepare 1 small yellow onion, roughly chopped
  4. Prepare 1 jalapeño pepper, sliced
  5. Make ready 1.5 lb. ground turkey
  6. Take 2 tbs. flour
  7. Take 1 clove garlic, minced
  8. Get 1 package McCormick mix (chicken chili)
  9. Make ready 2-3 cup vegetable stock
  10. Take 8 oz. white mushrooms, quartered
  11. Get 1 can (14.5 oz.) chopped tomatoes, undrained
  12. Make ready 1 can (15 oz.) “white” kidney beans, drained
  13. Take 2 cups cooked dark turkey meat, chopped
  14. Get 1/2 cup green onions, sliced thin
  15. Prepare 1/2 cup fresh cilantro, chopped
  16. Take Options:
  17. Get 8 oz. pasta shells, cooked
  18. Get 1/3 cup shredded cheese (per bowl)
  19. Make ready Dollop of sour cream (optional)

I was cold to the bone by California standards, and all I could think about was a big warm bowl of this White Bean Turkey Chili! Browned ground turkey and cannellini beans are combined with green chilies, onion and garlic in this chicken stock based soup seasoned with cumin, oregano and cinnamon. Definitely the best recipe I've found for white chili. I substituted diced chicken pieces for the ground turkey; added more beans.

Instructions to make White Bean Turkey Chili:
  1. In a large pot, sauté the bell pepper in olive oil. Then add the onions and the jalapeno pepper and cook until all ingredients are soft and onions are translucent.
  2. Remove the sautéed vegetables from the pot, set aside, and add some olive oil. Add the ground turkey and cook over medium heat until lightly browned. Drain off any fat.
  3. Add the garlic, the McCormick mix, and flour to the turkey. Mix and heat for 2 minutes. Add 2 cups of stock and heat to a light boil.
  4. While heating, add the mushrooms, tomatoes, and white beans. Add back in the peppers and onions.
  5. When the mixture begins to slightly boil, reduce the heat to low and cover. Cook for 10-15 minutes. While cooking, add the green onions and the cilantro. Adjust for taste with seasonings.
  6. Add in chunks of leftover turkey meat and heat through. Add additional stock if needed.
  7. Looks like thick / chunky chili.
  8. Tip: I like to mound chili on top of cooked pasta shells in a bowl. Top with cheese and heat in a microwave for 40 seconds.

Definitely the best recipe I've found for white chili. I substituted diced chicken pieces for the ground turkey; added more beans.
