The ingredients needed to make Veggie Chili:
  1. Prepare 2 tablespoons vegetable oil
  2. Make ready 2 cups chopped onion
  3. Get 1 1/2 cups mild green chile salsa
  4. Prepare 1 cup Almond Breeze Unsweetened Original (or for extra creaminess use Almond Breeze Unsweetened Almondmilk Cashewmilk Blend Original)
  5. Get 1 cup corn
  6. Take 1/2 cup vegetable broth
  7. Prepare 2 teaspoons each: ground cumin + Mexican oregano + chili powder and smoked paprika
  8. Make ready 2 (15 oz) cans small white beans; rinsed and drained*
  9. Take 1 (15 oz) can white kidney beans; rinsed and drained
  10. Prepare 1 (14 oz) can fire-roasted diced tomatoes
  11. Get 1 (4 oz) can diced green chiles
  12. Take 1/4 cup masa (corn flour)
  13. Get to taste Salt

Instructions to make Veggie Chili:
  1. Heat oil in a large saucepan over medium heat. Add onion and cook for 5 minutes. Add all remaining ingredients except masa, salt and toppings and bring to a boil. Reduce heat and simmer, covered, for 30 minutes.
  2. Stir in masa and cook for 10 minutes more; season with salt.
  3. Ladle into bowls and top with desired toppings.
