  2. Make ready 12 baby portobello mushrooms
  3. Get 4 oz softened cream cheese
  4. Take 1/2 cup grated gouda cheese
  5. Prepare 2 oz chopped onion
  6. Take 2 oz chopped red and green peppers mix
  7. Prepare 2 slice turkey bacon, chopped
  8. Make ready 1/2 roma tomato, chopped
  9. Make ready 1/2 tsp Italian herbs (oregano, parsley, etc)
  10. Prepare 1/4 tsp garlic powder
  11. Prepare 1 tsp olive oil, extra virgin
  12. Make ready salt and pepper
  13. Prepare 1/4 cup chopped mushroom stems
  14. Get 2 tbsp butter or margarine

Instructions to make Stuffed Baby Bellas:
  1. Preheat oven 350°F for 15 minutes. While waiting, chop everything needed.
  2. Destem the mushrooms, carefully. Cut off and discard the tough and dark ends of the stems and chop the rest. Make a 1/4 cup.
  3. Sauté the chopped onions, red and green peppers, the Italian herbs and the mushrooms stems.
  4. Add the olive oil and the turkey bacon. Stir. Add garlic powder, salt and pepper, to taste.
  5. Add the gouda and the cream cheese. Stir the mixture until melt. Add the tomato. And stir again. Let it cool for 5 minutes.
  6. Melt butter in a small bowl. Toss or baste the mushrooms in the butter mixture until coated.
  7. Stuff the cheese mixture into each mushroom, generously.
  8. Bake until they browned, cooking time can vary depending on the amount of stuffing, between 15 to 20 minutes.
  9. Broil until the cheese mixture browned, for 8 to 10 minutes. This is optional. Just give the crunch to the stuffing.
  10. Let them cool for 10 minutes and serve.
