The ingredients needed to make Chicken Laksa:
  1. Make ready 500 grams Chicken thigh fillet, 1 inch diced
  2. Prepare 1 Brown onion, diced
  3. Prepare 1 Zucchini, halved lengthways and sliced diagonally
  4. Prepare 2 medium carrot, sliced as zucchini
  5. Make ready 1 1/2 cup Broccoli florets
  6. Take 1 bunch Baby bok choy, roughly sliced
  7. Get 1 Handful snow peas, sliced diagonally
  8. Make ready 1/2 Red capsicum, sliced
  9. Take 1 Handful baby corn
  10. Get 1/2 cup Bamboo shoots
  11. Take 1 small can chopped water chestnuts
  12. Make ready 1 cup Bean sprouts
  13. Take 2 can (400ml) coconut cream
  14. Prepare 125 grams Rice noodle
  15. Take 1 Chopped chilli, to taste
  16. Prepare 1 Cayenne pepper, to taste
  17. Get 1 Cracked black pepper, to taste
  18. Take 1 jar laksa paste (or red curry, or panang)
  19. Take 1 tbsp Chicken stock powder
  20. Make ready 1 stick Spring onion, sliced diagonally

Instructions to make Chicken Laksa:
  1. In large non stick pot- brown chicken and set aside. Add onion, curry paste and fry until onion is soft. Add coconut cream and hard veggies, stock and spices. Bring to boil and simmer until slightly softened.
  2. Meanwhile- boil kettle, pour over rice noodle and cover until cooked. Strain and set aside.
  3. Add soft veggies (bok choy, bean sprouts) for another minute or two. Throw some rice noodle in bowl- then laksa- top with spring onion and toasted chopped peanuts. Wallah!
