  2. Get 3 large potatoes
  3. Make ready 1 Mature chedder, grated
  4. Prepare 1/2 tsp Whole grain mustard
  5. Prepare 1 dash Franks red hot sauce (optional)
  6. Get cheese sauce
  7. Take 1 Knob of unsalted butter
  8. Get 15 grams Plain flour
  9. Get 1/2 pints Semi skimmed milk
  10. Make ready 80 grams Grated cheese, I use mature chedder and Gouda

Steps to make Cauliflower Cheese And Potato:
  1. Peel and slice the potatoes into thin discs. Blanch in salted boiling water and set aside.
  2. Cut up the cauliflower into florets, blanch for 2-3 minutes in salted boiling water. Place in a large casserole dish.
  3. Make up the cheese sauce = melt the butter, stir in the flour for 1-2 mins, gradually add the milk stirring all the time till you get a smooth sauce. Season with salt and pepper and simmer for about 8 minutes, stirring slowly. Finally, take off the heat and add the cheese and mustard, stirring untill cheese melted.
  4. Pour the cheese sauce over the cauliflower. Add a dash of Franks red hot sauce over the top if you like. Layer the potatoes on top and sprinkle the grated cheese all over.
  5. Bake in the oven for about half an hour.
