The ingredients needed to make Simple Matoke:
  1. Make ready 6-8 potatoes
  2. Prepare Chillies
  3. Get to taste Salt
  4. Prepare 6 unripe bananas
  5. Make ready 1 onion
  6. Get 2 tomatoes
  7. Take 1 Tbsp garlic/ginger paste
  8. Make ready 1 Tbsp tomato paste
  9. Prepare 1 tsp cumin
  10. Make ready 1 Royce cubes
  11. Prepare 1 bunch dania
  12. Prepare 3 carrots

Instructions to make Simple Matoke:
  1. In salty water prepare the bananas and set aside. Peel the potatoes and put in a different bowl in water.
  2. Prepare all the other vegetables.
  3. On medium heat, cook the onions till a bit transparent then add the garlic/ginger paste and cook till golden. Add the potatoes and stir till they start to cook on the edges, add the bananas and continue to stir for 2-5mins.
  4. Add all other ingredients and cover till tomatoes are soft. Stir as you add water slowly until all combined. Let it sit on the fire on low heat for 30mins or till the potatoes are cooked through.
  5. Add dania and switch off the heat. Let it sit for 5 mins before serving.
