The ingredients needed to make Matoke ( Kenyan plantain:
  1. Take 9-10 green bananas (peeled and chopped into halves
  2. Get 2 tomatoes
  3. Take 1 cup water
  4. Get 1 onion- washed and sliced
  5. Get 2 gloves of garlic -thinly diced
  6. Take Dhania chopped
  7. Get to taste Salt
  8. Take Cooking oil

  1. In a cooking pan fry the onions and garlic until golden brown
  2. Add tomatoes, green capsicum, green bananas, salt
  3. Stir and cover
  4. Cook for a few minutes until the tomatoes and capsicum are soft, stir to avoid any burning
  5. Add water just enough to cover matoke cook for another ten minutes until the bananas are tender and the sauce is thickened a little
  6. Add dhania and stir into the ready matoke
  7. Serve the matoke and enjoy
