  3. Get 8 oz orange juice
  4. Prepare 1 t Adobo seasoning
  5. Take 1 tbsp ground coriander seed
  6. Make ready 1 tbsp cumin
  7. Prepare 1 tbsp paprika
  8. Prepare 1 tbsp dried oregano
  9. Prepare 1 tbsp onion powder
  10. Take 2 t cayenne pepper
  11. Take 1 tbsp cinnamon
  12. Prepare 2 tsp garlic powder
  13. Make ready 1 tsp chili powder
  14. Get 1 tsp ground thyme
  15. Prepare 4 yellow onions; medium dice
  16. Make ready 2 stalks celery; medium dice
  17. Prepare 2 carrots; medium dice
  18. Make ready 1 zucchini; medium dice
  19. Take 2 jumbo Russet potatoes; peeled and medium dice
  20. Get 1 bay leaf
  21. Prepare 1 vegetable oil
  22. Take 1 salt and white pepper

Instructions to make Adobo Pork Tip Stew:
  1. Season pork with half of the dried spices, except cinnamon.
  2. Heat vegetable oil in a large pot. Add pork. Caramelize well on all sides. Remove pork and set aside.
  3. Add veggies and remaining spices. Sweat for approximately 5-10 minutes, or until veggies start to become translucent.
  4. Add chicken stock. Scrape the brown bits on the bottom. Add pork and veggies after all bits are encorporated into the stock.
  5. Add pork, veggies, potatoes, and orange juice back to the pot. Add cinnamon and stir well.
  6. Cover and simmer approximately one hour, or until potatoes and pork are tender.
