The ingredients needed to make Pork Menudo:
  1. Get 1/2 kg pork cut into cubes
  2. Prepare 1/4 kg chicken or pork liver cut into cubes (or 1 small can of liver spread)
  3. Get 4 hotdogs sliced diagonally (or 1 can of sliced vienna sausages) optional
  4. Get 500 grams tomato sauce
  5. Prepare 2 tbsp tomato paste
  6. Take 4 potatoes cut into cubes
  7. Take 2 carrots cut into cubes
  8. Prepare 4 clove garlic, chopped
  9. Take 1 small can green peas
  10. Take 2 medium onion, chopped
  11. Make ready 3 tbsp raisins
  12. Get 1 cooking oil
  13. Prepare 1/2 cup water
  14. Get 2 tbsp soy sauce
  15. Take 1 bay leaf
  16. Take 1 sugar to taste
  17. Prepare 1 salt and pepper to taste

Steps to make Pork Menudo:
  1. Saute garlic and onions until garlic turns golden brown and onin is transluscent. Set aside.
  2. Cook pork cubes in oil for 15-20 minutes or until brown and tender. Add and cook chicken liver for 15 minutes or until it starts to break down a little in the edges or changes color. If using liver spread, add it after next step.
  3. Add and cook hotdogs or sausage. Add potatoes and water. Bring to boil and simmer until potatoes are cooked. Add carrots and green peas.
  4. Add sauted garlic & onion. Pour tomato sauce, tomato paste, soy sauce, and water. Add raisins, bay leaf, sugar, salt, and pepper to taste. Simmer for 5-10 minutes or until sauce reduces.
  5. Serve with rice and enjoy!
