The ingredients needed to make Chicken Piccata:
  1. Get 2 skinless, boneless chicken breasts
  2. Take Oilve oil
  3. Prepare 2 Tbsp. Capers, rinsed
  4. Get 1 garlic clove, crushed
  5. Get 1 1/2 lemon tested, and juiced and 1/2 sliced
  6. Take 1 C. Chicken stock
  7. Get 1/2 bunch flat leaf parsley, chopped

Steps to make Chicken Piccata:
  1. Cut the chicken breasts through the middle lengthwise to open them out like a book. Put them between 2 pieces of plastic wrap and pound them out with a mallet or rolling pin until 1 centimeter thick.
  2. Heat 1 tsp. oil in frying pan. Fry the flattened chicken breasts for 4 minutes on each side until golden brown and cooked through. Remove from pan, season and leave to rest under foil.
  3. Add the capers and garlic and fry for 1 minute, then add the lemon juice, zest and stock. Simmer for a few minutes until the sauce thickens slightly.
  4. Add the chicken back to the pan, with the lemon slices and parsley, and spoon over the sauce. Serve with green salad and cauliflower rice. (Optional)

These are two substances that boost the quality and function of the grey matter in your brain. It’s true: consuming a tuna fish sandwich can seriously elevate your mood.

It’s easy to drive away your bad mood when you eat grains. Quinoa, barley, teff, millet, etc are all good for helping you feel better. They fill you up better and that can help improve your moods as well. Feeling starved can be a real downer! The reason these grains are so good for your mood is that they are easy for your body to digest and process. These foods are easier to digest than others which helps jumpstart a rise in your sugar levels which in turn kicks up your mood to a happier place.

Studies have discovered that this amino acid essentially stimulates brain waves. This helps better your mental sharpness while calming the rest of your body.
